1/1/1753 is the minimum value for a datetime column in SQL Server. They must be using a non-nullable column, not datetime2, and/or using System.Data.SqlTypes.SqlDateTime.MinValue to mean the value is missing in their logic.

Some games on the 360 could be played offline. I used to take my machine away with me to no network areas and any achievement I popped uploaded when I got home, always had odd dates on it as my old machine never kept the date unless it was hooked up to the net.
Seems like this could be a similar issue. -
I wish they'd get rid of the time unlocked so bad due to ocd.

Unpopular opinion: I hate secret achievements. I’m all for being inquisitive in games, but damn, I like to know what I have to work for
