Uh, you can swap mid characters mid shield combo and switch in zhongli to get 7 shields

As of Volume 10, Maple has a VIT count of 16,000+. I'd be surprised if any playable Genshin character would get one of their stats (outside of HP, of course) to even half that number.
She also defeated an undefeatable boss and the devs had to nerf Devour as well as implement defense pierce/penetration because of her.

And the funny thing about genshin mechanics is that having all these shields is utterly useless since they all take full dmg when you get hit
