Getting melee kills is probably the most exciting and funny thing to do in Tarkov. I'd recommend getting a M-2 sword if you want to try and do some more. You can one shot people in the head.
Edit: You could also try some of the axes like the Camper, a lot easier getting headshots with axes from my experience.

So, been there, done that. I just started playing right before this wipe. I was like level 6 or something, never even used the knife, and saw a sniper like that. Did the same, except i was standing pretty much on his back, knifing him from behind. Nada. He jumped up, and destroyed me with whatever gun he had. And I'm sitting there like "WTF just happened? Usually a knife from behind in instant death in most other FPS". I now realize i got Tarkoved and didnt even know it.
