What's the most satisfying?
...Do this, actually.
Make Gaffy a Knight. He's virtually guaranteed to have zero skills unlocked.
Now outfit him with all your best gear.
Give him Items as a subcommand. Make sure he has Potions learned.
Now, make sure you have at least one Thief who can steal every piece of equipment.
When the battle starts, he can't do anything but melee and use items.
ROB HIM BLIND!
Now just whack him around while he ineffectually heals.
End the battle.
You now have two of all your best equipment.

MOST satisfying as far as Gaffgarion goes is robbing him of everything at the Gallows fight and then also at the castle gate fight

I know I saw a video where you can level him up to 97 or something and make him a ninja and trap him with dont move and he starts throwing Chaos Blades and Ragnarocks and all sorts of other high level weapons at your ranged characters that you can catch.

Honestly, Ramza and Rad are kinda the douchbags.
They knew who Gaffgarion was and have been working with him as apprentices... But then suddenly turn against him on this mission. Gaffgarion does say he believes he's working for the greater good, not sure if that is true or not, but between that and all the mercy he shown Ramza... I can see it.
Gaffgarion's only real crime is not telling them the whole plan, kept things close to the vest, Gaffgarion is a ruthless man (something Ramza and Rad should know about) and yet he still tried to get Ramza to stick with him... That tells me that Gaffgarion actually cared for Ramza. Though he has his limits and had to eventually fight Ramza for real.
My headcanon is that Gaffgarion didn't go all out on ANY of the fights, including the last one, because say what you will about Gaffgarion, he cared for Ramza. If Gaffgarion went all out on the first fight, Ramza would be 100% dead.
But I always liked to steal his shit, status the hell out of him, and throw stones at him.

I usually leave him as is so the battle is more fun. That battle is my favorite in the game and I like to enjoy it properly.

Removing his equipment is satisfying, but I prefer killing him with Ramza. My Ramza is always a squire sub white mage with half mp. Therefore, Ramza can easily kill him with ONE holy.
