Is it ever explained why Leon (and by extension other re characters) are practically superhuman (not including wesker since, ya'know). I'm assuming anything that doesn't happen in scripted scenes or cutscenes is not classed as canon, and I'm not 100% sure on how canon Re vendetta, damnation and degeneration are for example, but I dont even need to list Leon's feats, it's insane some of the things he can do, things that no human could ever feasibly do no matter the training. In my headcanon I would assume he has some natural viral immunity, and that somehow he is simply just above the regular human strength, speed durability and reaction time, with this stuff being improved by his plaga infection (maybe some remaining residual effects despite the plaga being destroyed) and obviously complimented by his training. I wanted to know if any lore knowledgeable people had an answer, and if there is a canon explanation, or hints at one at the very least, as to why leon can outrun boulders, dodge bullets, and lift impossibly heavy things. (Yes I understand its just a game and there doesn't need to be an explanation, just wanted to k ow if one does exist)

To be blunt it's basically plot armour, buy and large the things that happen to RE protagonists would kill most people. One moment in Vendetta where Leon gets thrown across a concrete wall would see his shoulder shattered, most ribs broken and a lung likely punctured according to my mother who was a nurse for nearly 40 years.
But you could argue things like them wearing kevlar vests as well as their training which would make them more resistant to pain. But you gotta suspend your disbelief when it comes to this franchise, it's more fun that way plus you know when Leon (or any other RE character) is truly hurt then it's majorly serious.

It's called plot armor and RE goes crazy with it on every character.
I think RE3R is the most ridiculous with the shit Jill survives though. It's just stupid in that game.

Becuase it's Resident Evil. Honestly, as much as I absolutely love this franchise, I always thought the whole thing always had a really goofy element to it in some form or another. From the corny dialogue and acting of the older games to the ridiculous over the top action sequences of the later games. The fact that the characters are borderline superhuman in several instances such as Jill taking a rocket blast from a foot in front of her or Chris literally punching a whole damn bolder, is just among the goofy nonsense that I love about these games and I just accept it.

I think the real answer is that the series was influenced by the over-the-top live action movies when RE4 released.

Starting with 4, many of them have been infected with something and survived with superhuman abilities: Leon with Las Plagas, Jill with T (or even the Nemesis variant), Sherry with G, and Ethan and Mia with the mold. And I guess Wesker but he’s a cocktail by the time 5 comes around.
Claire and Moira technically got T-Phobos, but we haven’t seen any enhancements in females by that virus. Odd that Alex made it that way.
