The character fighting the lobsters in the first picture eventually leads a group to kill an enormous Bear that is essentially one of 12 “Gods”/Guardians that protects the world.
So a pretty accurate representation actually.

edit: a google search attributes this drawing to George Gross as a pulp comic for Man's Conquest magazine, way back in 1956. no relation to the Dark Tower.
ID: gz47n86This is one of the illustrations that appears occasionally in the book series, specifically The Drawing of the Three, the second book. While you correct that this isn't Roland Deschain, it IS Eddie Dean. I pulled out the book just to be sure, and this picture is in it.
EDIT: It is only in some versions of the book
