Well its an interesting fact, because in Vanishing Point the Kowalski dies in an explosion by driving into a roadblock, kind of foreshadowing that Ethan's car is blown up and he himself also died in RE7.

that's a big leap there buddy. that plot point was not thought up till re8, it's retro actively jammed in the plot to 7 there is no deep reference to a random movie in there.

It’s not a perfect match for either, but Ethan’s car also might be inspired by Sam Raimi’s Delta 88 (seen in his movies, ie Evil Dead)

How is it a nod to vanishing point? It's the same car, but there is nothing about it that makes any sense as a vanishing point reference specifically. The car is also in Resident Evil 3 (most likely because of asset reuse).

Correlation is no causation. Just because they both have Dodge Challengers in it does not mean anything. It may have been a nod if Jack called Ethan Kowalski at one point, or refenced the plot from the movie like pointing at the car and saying " Well Ethan I bet you could drive from Denver to San Francisco in under 15 hours in this!". Unfortunately this is not the case.
