Exactly, find a legendary horse early and take your time with everything the game has to offer before completing the main story missions.

(There's the fastest horse in the game you can obtain in chapter one after the campaign opens up a bit)

best advice i can give is to role play as the man arthur is shown to be rather than treating it like some goofy create-a-character. it's like a movie with incredible acting.
