Cogelo literally means "fuck him" unless you're in Spain which is obviously where the game takes place. However the game uses more Latin American Spanish than Spainish where "coger" only means to fuck.
If you speak Spanish, every time you start the game you hear whispers saying "cogelo cogelo cogelo...."

Well, "Te cogí" and "Cogelo" actually just mean "I got you" and "catch him" only some people, on countries like Mexico, use those words as slang for sex. Why would they censor a word which actual real meaning is not offensive at all?

Because why would they censor cussing in an M rated game? One of the earliest lines in the game is Leon exclaiming “Shit!” upon seeing the officers accompanying get attacked, why is it any different if people swear in Spanish?

Spanish doesn't work that way my friend. In this context, "Cogelo" means "Catch him". In Spain, "coger" doesn't actually means f*ck but in Mexico does, at the same time, other countries don't necessarily use the word in that context.

Well, there are at least one insult they say that contains what it's commonly called "bad language". But given that only the more recent RE games (maybe starting with revelations 2 not sure) started to use "bad language" more, I guess that's fine for "the modern audiences".

No it doesn't tf. Spanish speaker my whole life, te cogí means I got you. Some, not all, latin american countries use the term coger as fuck, but not spain; and even then the context of the usage of the word matters. Nothing is even remotely insinuating anything sexual.
